  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk
  • For the cinnamon buttercream:
  • 1 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup heavy cream (adjust as needed)
  • 1 teaspoon vanilla extract
  • Optional cocoa buttercream (for piping contrast):
  • 1/4 cup buttercream mixed with 1 tbsp unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream butter and both sugars until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternate adding dry mixture and buttermilk into the batter, mixing just until combined.
  5. Divide batter between pans and bake 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For buttercream: beat butter until smooth, then gradually mix in powdered sugar, cinnamon, vanilla, and cream until fluffy.
  7. Assemble cake by spreading buttercream between layers and piping rosettes on top. Dust with powdered sugar. Optionally pipe cocoa buttercream accents.

  • Don’t overmix the batter — keep it fluffy and airy.
  • Use a large star tip for those perfect piped swirls.
  • Chill before slicing for clean layers and bold flavor.
