For the Crust:

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 tsp ground cinnamon

For the Cheesecake Filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tsp ground cinnamon

For the Topping:

  • Mini churros (store-bought or homemade)
  • 1/2 cup caramel sauce
  • 1/2 tsp ground cinnamon
  • Powdered sugar (for dusting)

Instructions

1️⃣ Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, melted butter, and cinnamon until combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

2️⃣ Make the Cheesecake Filling:

  1. In a large bowl, beat the cream cheese and sugar until smooth.
  2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and cinnamon.
  3. Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula.

3️⃣ Bake the Cheesecake:

  1. Bake for 50–60 minutes, or until the center is just set. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  2. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.

4️⃣ Add the Topping:

  1. Arrange mini churros on top of the chilled cheesecake.
  2. Drizzle caramel sauce generously over the churros and sprinkle with a pinch of cinnamon.
