- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cream (for ganache)
- 1 cup semi-sweet chocolate chips
- Powdered sugar (for garnish)
- Holiday toppers (for garnish)
- Preheat oven to 350°F. Line and grease a 10×15-inch jelly roll pan.
- Beat eggs and sugar for 5–6 minutes until thick. Add vanilla.
- Sift together flour, cocoa, baking powder, and salt. Fold into the egg mixture.
- Spread batter in the pan and bake for 10–12 minutes.
- Invert the cake onto a sugared towel, peel off parchment, and roll with the towel. Cool.
- For the filling, beat cream, sugar, and vanilla until stiff.
- Unroll the cooled cake, spread cream filling, and reroll. Chill for 30 minutes.
- For the ganache, heat cream and pour it over chocolate chips. Stir until smooth.
- Cool the ganache, then frost the cake with it. Create bark texture using a fork. Chill.
- Dust with powdered sugar and decorate festively.
