Deliciously soft and fluffy brioche buns filled with molten chocolate, perfect for a sweet breakfast or dessert.

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons instant yeast
  • 3/4 cup warm milk
  • 2 large eggs
  • 1/4 cup unsalted butter, softened
  • 1 cup thick chocolate spread (Nutella or similar)
  • 1/4 cup chopped dark chocolate (optional)
  • 1 egg (for egg wash)
  • 2 tablespoons sesame seeds (optional)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast.
  2. Add warm milk and eggs. Mix until a shaggy dough forms.
  3. Add softened butter and knead 8–10 minutes until smooth and elastic.
  4. Cover and let rise 1–1.5 hours until doubled in size.
  5. Divide dough into 8 portions. Flatten each piece and place 1–2 tablespoons chocolate spread in the center. Add chopped chocolate if using.
  6. Pinch edges tightly to seal and form into smooth balls. Place seam-side down on lined baking tray.
  7. Cover and let rise 30–40 minutes.
  8. Brush with egg wash, sprinkle sesame seeds, and bake at 180°C / 350°F for 15–18 minutes until deeply golden.
  9. Let cool slightly before biting in for that lava-style chocolate flow.

Notes

  • Serve warm for maximum chocolate melt.
  • Dust lightly with powdered sugar.
  • Pair with coffee or hot milk.
  • Freeze small scoops of chocolate before stuffing to prevent leaks.
  • Seal dough tightly to keep filling inside.
  • Reheat 10 seconds in microwave for extra gooey center.
