- 200g dark chocolate, chopped
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 200g cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla
- 1/2 cup heavy cream, whipped to soft peaks
- 1/2 cup chocolate chunks
- 1/2 cup heavy cream (for ganache)
- 3/4 cup semi-sweet chocolate chips
- Preheat oven to 180°C (350°F). Grease 4–6 small bundt molds or ramekins.
- Melt dark chocolate and butter together until smooth. Let cool slightly.
- Whisk sugar and eggs until light and slightly fluffy. Stir in vanilla. Fold in melted chocolate mixture.
- Gently fold in flour and salt just until combined.
- In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream and chocolate chunks.
- Fill molds halfway with chocolate batter. Spoon cheesecake filling in the center, then top with remaining chocolate batter to seal.
- Bake for 12–15 minutes. Edges should be set while center remains slightly soft. Do not overbake.
- For ganache, heat cream until steaming and pour over chocolate chips. Stir until glossy and smooth.
- Let cakes rest for 5 minutes, then carefully invert onto plates. Pour warm ganache generously over the top.
- Serve immediately while the center is molten and gooey.
