Indulge in this ultra-decadent chocolate lava cheesecake that features a creamy, molten center and rich chocolate flavor.

Ingredients

  • 200g dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 200g cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup heavy cream, whipped to soft peaks
  • 1/2 cup chocolate chunks
  • 1/2 cup heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F). Grease 4–6 small bundt molds or ramekins.
  2. Melt dark chocolate and butter together until smooth. Let cool slightly.
  3. Whisk sugar and eggs until light and slightly fluffy. Stir in vanilla. Fold in melted chocolate mixture.
  4. Gently fold in flour and salt just until combined.
  5. In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream and chocolate chunks.
  6. Fill molds halfway with chocolate batter. Spoon cheesecake filling in the center, then top with remaining chocolate batter to seal.
  7. Bake for 12–15 minutes. Edges should be set while center remains slightly soft. Do not overbake.
  8. For ganache, heat cream until steaming and pour over chocolate chips. Stir until glossy and smooth.
  9. Let cakes rest for 5 minutes, then carefully invert onto plates. Pour warm ganache generously over the top.
  10. Serve immediately while the center is molten and gooey.
