No-bake chocolate chip cookie dough bars with a graham cracker crust and creamy cheesecake layer.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar (for filling)
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chocolate cookie dough, chilled
  • Extra chocolate chips for topping

Instructions

  1. Make the crust by combining graham cracker crumbs, melted butter, and sugar. Press into a parchment-lined baking pan.
  2. Beat cream cheese, sour cream, sugar, vanilla, and egg until smooth. Pour over the crust.
  3. Drop chilled cookie dough in small chunks over the cheesecake layer.
  4. Sprinkle extra chocolate chips on top.
  5. Bake at 325°F (160°C) for 30–35 minutes until center is set. Chill for 2 hours before slicing.

Notes

  • Let the bars cool completely before slicing for clean cuts.
  • Store leftovers in the refrigerator for up to 3 days.
