- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup hot coffee or hot water
- 1 1/2 cups pitted cherries (fresh or frozen)
- 2 tablespoons sugar (for cherry filling)
- 1 teaspoon lemon juice
- 1 cup heavy whipping cream
- 1/2 cup mascarpone or cream cheese
- 1/4 cup powdered sugar (for cherry cream filling)
- 1/2 cup unsalted butter, softened (for frosting)
- 1 1/2 cups powdered sugar (for frosting)
- 1/3 cup cocoa powder (for frosting)
- 2–3 tablespoons heavy cream (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- Preheat oven to 175°C / 350°F. Grease and line two 6–8 inch cake pans.
- Mix flour, cocoa, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth. Stir in hot coffee (batter will be thin).
- Bake 25–30 minutes. Cool completely before assembling.
- Simmer cherries with sugar and lemon juice for 5–7 minutes until slightly thickened. Cool completely.
- Whip cream to soft peaks. In another bowl, mix mascarpone and powdered sugar. Fold whipped cream into mascarpone mixture.
- Spread cherry cream over the first cake layer, spoon cherry compote evenly. Top with second layer.
- Beat butter, powdered sugar, cocoa, cream, and vanilla until fluffy. Pipe or spread frosting on top.
