A rich and fudgy chocolate cherry cake layered with creamy cherry filling and topped with chocolate frosting, perfect for any celebration.

  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking powder

  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup hot coffee or hot water
  • 1 1/2 cups pitted cherries (fresh or frozen)
  • 2 tablespoons sugar (for cherry filling)
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup mascarpone or cream cheese
  • 1/4 cup powdered sugar (for cherry cream filling)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 1/3 cup cocoa powder (for frosting)
  • 23 tablespoons heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 175°C / 350°F. Grease and line two 6–8 inch cake pans.
  2. Mix flour, cocoa, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth. Stir in hot coffee (batter will be thin).
  4. Bake 25–30 minutes. Cool completely before assembling.
  5. Simmer cherries with sugar and lemon juice for 5–7 minutes until slightly thickened. Cool completely.
  6. Whip cream to soft peaks. In another bowl, mix mascarpone and powdered sugar. Fold whipped cream into mascarpone mixture.
  7. Spread cherry cream over the first cake layer, spoon cherry compote evenly. Top with second layer.
  8. Beat butter, powdered sugar, cocoa, cream, and vanilla until fluffy. Pipe or spread frosting on top.
