Sweet and spicy chicken thighs with creamy smoked gouda mashed potatoes – a perfect comfort food dinner.

Ingredients

  • 6 boneless chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup heavy cream
  • 1 cup shredded smoked gouda cheese

Instructions

  1. Boil potatoes in salted water for 15 minutes until tender. Drain and mash with butter and cream.
  2. Stir shredded smoked gouda into the mashed potatoes until melted.
  3. Mix honey, chopped chipotle peppers, garlic, soy sauce, and smoked paprika in a bowl.
  4. Heat olive oil in a skillet. Sear chicken thighs for 5–6 minutes per side. Brush with glaze while cooking.
  5. Serve chicken over mashed potatoes. Drizzle extra sauce and garnish with parsley.

Notes

  • Adjust chipotle peppers for desired spice level.
  • Use bone-in thighs for extra flavor.
  • Leftovers keep well refrigerated for 2 days.
