Chili Roasted Corn is a smoky, buttery, and spicy dish that’s wildly addictive, perfect as a side or snack.

Ingredients

  • 3 cups sweet corn kernels (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Juice of 1/2 lime
  • Salt and black pepper to taste
  • Fresh chopped cilantro or parsley for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add butter and olive oil until melted and hot.
  2. Add corn kernels and sauté, stirring occasionally, for about 8–10 minutes until they start to char and become golden.
  3. Sprinkle in paprika, chili powder, garlic powder, salt, and pepper. Stir well to coat evenly and continue cooking for 2 more minutes.
  4. Remove from heat and squeeze fresh lime juice over the top. Toss to combine.
  5. Garnish with freshly chopped cilantro or parsley and serve immediately.

Notes

  • Use fresh corn for extra crunch, or char frozen corn directly from the bag.
  • Adjust chili heat by using cayenne or keeping it mild with sweet paprika.
  • Add crumbled feta or grated vegan cheese for a creamy twist.
