A hearty and cheesy one-pot meal combining chili and macaroni for a comforting weeknight dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 (14 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 2 cups beef broth
  • 2 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups elbow macaroni (uncooked)
  • 1 1/2 cups shredded cheddar cheese (plus more for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and onion, cooking until browned. Stir in garlic and tomato paste.
  2. Add diced tomatoes, kidney beans, broth, chili powder, cumin, salt, and pepper. Simmer.
  3. Stir in macaroni and simmer uncovered for 10–12 minutes until pasta is tender.
  4. Turn off the heat and stir in cheddar cheese until melted.
  5. Serve in bowls, topped with extra cheese.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Substitute ground turkey for a lighter version.
  • Store leftovers in an airtight container for up to 3 days.
