Chickpea Peach Salad is a sweet-meets-savory summer salad that combines fresh peaches, chickpeas, and a honey lime dressing for a refreshing dish perfect for warm weather.

  • 1 can (15 oz) chickpeas, drained & rinsed
  • 2 ripe peaches, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • ¼ cup crumbled feta cheese
  • 2 tbsp fresh mint leaves, roughly torn
  • 1 tbsp chopped parsley (optional)
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp honey (for dressing)
  • Juice of 1 lime (for dressing)
  • 1 tsp Dijon mustard (for dressing)
  • Pinch of salt & pepper (for dressing)

Instructions

  1. Combine chickpeas, peach slices, tomatoes, and red onion in a bowl.
  2. In a small jar or bowl, mix olive oil, honey, lime juice, mustard, salt, and pepper to make the dressing.
  3. Drizzle the honey-lime dressing over the salad and toss gently.
  4. Sprinkle in crumbled feta and fresh mint.
  5. Serve immediately or refrigerate for 15 minutes before serving.

  • This salad can be made ahead of time and stored in the refrigerator.
