1 can (15 oz) chickpeas, drained & rinsed
2 ripe peaches, thinly sliced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
¼ cup crumbled feta cheese
2 tbsp fresh mint leaves, roughly torn
1 tbsp chopped parsley (optional)
2 tbsp olive oil (for dressing)
1 tbsp honey (for dressing)
Juice of 1 lime (for dressing)
1 tsp Dijon mustard (for dressing)
Pinch of salt & pepper (for dressing)
Instructions
Combine chickpeas, peach slices, tomatoes, and red onion in a bowl.
In a small jar or bowl, mix olive oil, honey, lime juice, mustard, salt, and pepper to make the dressing.
Drizzle the honey-lime dressing over the salad and toss gently.
Sprinkle in crumbled feta and fresh mint.
Serve immediately or refrigerate for 15 minutes before serving.
Notes
This salad can be made ahead of time and stored in the refrigerator.
Feel free to add other vegetables or nuts for extra crunch.
Adjust the sweetness of the dressing by adding more or less honey.
