A creamy and cheesy chicken zucchini bake that is easy to make and perfect for a comforting dinner. This dish combines shredded chicken, fresh zucchini, cherry tomatoes, and two types of cheese for a delightful meal.

Ingredients

  • 2 cups cooked shredded chicken
  • 2 zucchinis, thinly sliced
  • 1 cup cherry tomatoes
  • 1 cup mozzarella, shredded
  • ½ cup Parmesan
  • ½ cup sour cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt & pepper
  • 1 tbsp olive oil
  • Fresh thyme, for garnish

Instructions

  1. Mix chicken, sour cream, and spices. Spread in baking dish.
  2. Layer zucchini and cherry tomatoes.
  3. Top with cheeses. Drizzle with olive oil.
  4. Bake at 190°C (375°F) for 25–30 minutes until golden and bubbly.
  5. Garnish with thyme and serve warm.

Notes

  • For a low-carb version, you can replace some of the zucchini with additional chicken.
  • Feel free to add other vegetables like bell peppers or spinach for added nutrition.
  • Leftovers can be stored in the fridge for up to 3 days.
