Chicken Scarpariello is a sweet and savory Italian-American dish featuring chicken thighs cooked with bell peppers, garlic, and a tangy sauce.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 red & 1 green bell pepper, chopped
  • 1 small onion, sliced
  • 4 garlic cloves, minced
  • 1 tsp oregano
  • ½ tsp chili flakes
  • ½ tsp black pepper
  • Salt to taste
  • 1 cup chicken broth
  • 1 tbsp white vinegar
  • 1 tsp honey
  • 2 tbsp parsley, chopped

Instructions

  1. Season thighs with salt and pepper. Sear in oil over medium heat until golden (5–6 min per side).
  2. Add peppers, onion, and garlic. Sauté until softened. Stir in oregano and chili flakes.
  3. Add broth, vinegar, and honey. Stir to combine.
  4. Return chicken to the pan. Cover and simmer 25–30 minutes until cooked through.
  5. Uncover and simmer 5 more minutes to thicken. Garnish with parsley.

Notes

  • Serve with crusty bread to soak up the sauce.
  • You can add potatoes for a heartier meal.
  • Adjust the heat by adding more chili flakes if desired.
