Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 tsp soy sauce
  • 1/4 tsp black pepper
  • 1/2 tsp thyme (fresh or dried)
  • Chopped parsley, for garnish
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 3 tbsp unsalted butter
  • Salt to taste

Instructions

  1. Season chicken with paprika, garlic powder, salt and pepper. Sear in olive oil over medium heat for 5–6 minutes per side until golden and cooked through. Set aside.
  2. In the same pan, melt butter with olive oil. Add mushrooms and cook until browned.
  3. Stir in garlic and cook for 1 minute. Sprinkle flour, stir well and cook for 1 minute more.
  4. Gradually whisk in chicken broth. Add soy sauce, thyme and black pepper. Simmer until thickened.
  5. Return chicken to pan and spoon sauce over. Simmer for 3–5 minutes to absorb flavors.
  6. Meanwhile, boil potatoes until tender. Drain and mash with milk, butter, and salt.
  7. Serve chicken and mushroom gravy over mashed potatoes. Garnish with parsley.
