- 1 lb ground chicken
- 1 small onion, finely grated
- 2 garlic cloves, minced
- 1/4 cup breadcrumbs
- 1 egg
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil (for cooking)
- For the creamy herb sauce:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon flour
- 1 1/4 cups milk
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- Salt and pepper to taste
- Sides:
- 1 lb baby potatoes, boiled or roasted
- Mixed greens with tomato slices + olive oil dressing
- In a large bowl, mix ground chicken, onion, garlic, breadcrumbs, egg, paprika, salt, and pepper. Form into meatballs.
- Heat olive oil in a skillet and cook meatballs over medium heat until golden and fully cooked (about 4–5 mins per side). Remove and set aside.
- In the same skillet, melt butter and sauté garlic. Stir in flour and cook for 1 minute. Slowly whisk in milk.
- Simmer until sauce thickens, then stir in parmesan, parsley, salt and pepper.
- Return meatballs to pan and coat in sauce. Let simmer 2–3 minutes to absorb flavor.
- Serve hot with baby potatoes and a fresh salad.

- Add a squeeze of lemon for brightness
