A creamy, no-bake frozen dessert loaded with cherries and raspberries, perfect for summer.

Ingredients

  • 1 cup fresh or frozen cherries (pitted)
  • 1 cup fresh raspberries (plus extra for topping)
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 tsp vanilla extract
  • 1 1/4 cups heavy whipping cream
  • 1 tbsp lemon juice
  • Pinch of salt
  • Optional: vanilla ice cream, cherry syrup, or whipped cream for serving

Instructions

  1. Cook the berries in a saucepan with sugar and lemon juice until soft, then blend into a purée.
  2. Whisk eggs and berry purée over simmering water until thickened and fluffy.
  3. Whip cream with vanilla and a pinch of salt until soft peaks form, then fold into the berry mixture.
  4. Pour into a lined loaf pan and freeze for at least 6 hours or overnight.
  5. Slice and serve with fresh berries, whipped cream, or ice cream.
