1 cup unsalted butter, softened
2 cups sugar
4 eggs
1 tsp vanilla extract
½ tsp almond extract (optional)
3 cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 can cherry pie filling (or homemade cherry compote)
Instructions
Preheat oven to 175°C (350°F). Cream butter and sugar until fluffy. Beat in eggs one at a time. Add vanilla and almond extract.
In a separate bowl, whisk together flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix just until combined.
Spread ⅔ of the batter into a greased 9×13 pan. Spoon cherry filling evenly over the batter, then drop small spoonfuls of the remaining batter on top, leaving cherries peeking through.
Bake for 35–40 minutes, until lightly golden and set. Cool fully before slicing into bars.
Notes
Serve with vanilla ice cream or whipped cream.
Use a gluten-free flour blend for gluten-free bars.
Fresh or frozen cherries cooked with sugar and lemon make a great homemade filling.
