1½ cups all-purpose flour
½ cup granulated sugar
½ tsp salt
¾ cup unsalted butter, cold and cubed
1 can (21 oz) cherry pie filling or homemade cherry compote
(Optional) a few drops of natural pink food coloring
8 oz cream cheese, softened
⅓ cup powdered sugar
½ tsp vanilla extract
1 cup whipped cream or whipped topping
¼ cup crushed graham crackers or cookie crumbs
2 tbsp pink sanding sugar or edible glitter
Instructions
Preheat oven to 175°C (350°F). Mix flour, sugar, and salt. Cut in butter until crumbly. Press into lined 8×8 pan. Bake 18–20 minutes until golden. Cool.
Spread cherry filling evenly over cooled crust.
Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream. Spread over cherry layer. Add pink color if desired.
Chill 3+ hours until set. Before serving, top with graham crumbs and pink sugar.
Cut into bars and serve chilled.
Notes
For a homemade cherry compote, cook fresh or frozen cherries with sugar and cornstarch until thickened.
Store leftovers in the refrigerator for up to 3 days.
