Chewy, gooey, fruity and irresistibly indulgent Cherry Chocolate Chip Cookies.

Ingredients

  • 170 g unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chocolate chips
  • ½ cup chopped cherries (fresh or jarred, well-drained)
  • Extra whole cherries, for topping

Instructions

  1. Preheat oven to 180°C (350°F). Line baking trays with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in egg and vanilla until smooth.
  4. Mix in flour, baking soda, and salt just until combined.
  5. Fold in chocolate chips and chopped cherries gently.
  6. Scoop dough onto trays, spacing well. Press a whole cherry into the center of each cookie.
  7. Bake 10–12 minutes until edges are set but centers remain soft.
  8. Cool slightly on the tray, then transfer to a rack.

Notes

  • Chill dough 30 minutes for thicker cookies
  • Pat cherries dry to avoid excess moisture
  • Add extra chocolate chips on top for bakery look
