- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1 cup canned cherries (drained) or fresh pitted cherries
- 1/3 cup chocolate chips (optional for extra gooeyness)
- 1/2 cup semi-sweet chocolate chips (for ganache)
- 1/4 cup heavy cream (for ganache)
- Optional: extra cherries + chocolate chips for topping
- Make the fudgy base by mixing melted butter, sugar, eggs, and vanilla. Stir in cocoa, flour, and salt until combined.
- Fold in cherries and chocolate chips.
- Pour batter into a greased or parchment-lined 8×8 pan. Bake at 350°F for 25–30 minutes.
- Make the ganache by warming cream and pouring over chocolate chips. Let sit for 2 minutes, then stir until smooth.
- Pour ganache over cooled brownies, top with extra cherries and chips if desired. Chill for 20–30 minutes before serving.
Notes
- Use fresh pitted cherries for best results.
- Chill the brownies to set the ganache properly.
- Store in an airtight container for up to 3 days.
