  • ½ cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla extract
  • Butterscotch Fondant Center:
  • ½ cup butterscotch chips
  • 2 tablespoons unsalted butter
  • 2 tablespoons condensed milk
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • Topping:
  • ½ cup chocolate ganache or butterscotch sauce
  • Fresh cherries

Instructions

  1. MAKE THE BATTER: Preheat oven to 350°F (175°C). Whisk together flour, cocoa, baking soda, baking powder, and salt. In another bowl, mix sugar, oil, buttermilk, egg, and vanilla. Combine until smooth.
  2. BAKE THE BASES: Grease a mini cake or muffin pan. Fill each cavity halfway with batter. Bake for 12–15 minutes, until set but still soft in the center. Cool completely.
  3. PREPARE THE FONDANT: In a small saucepan, melt butterscotch chips with butter over low heat. Stir in condensed milk and vanilla, then remove from heat. Add powdered sugar gradually and stir until thick, smooth, and scoopable.
  4. ASSEMBLE THE BOMBS: Cut or scoop a small well into each cake center. Fill with a spoonful of the fondant, then smooth the tops.
  5. FINISH & DECORATE: Drizzle each bomb with warm chocolate ganache or butterscotch sauce. Top with fresh cherries for that glossy, irresistible finish!
