Cheesy Zucchini Beef Bake is a low-carb, hearty dish that combines ground beef, zucchini, and cheese for the ultimate cozy dinner.

  • 1 lb ground beef (or turkey)
  • 2 medium zucchinis, sliced into half-moons
  • 2 medium tomatoes, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, brown the ground beef with olive oil, garlic, and onion. Cook until beef is no longer pink.
  2. Toss in zucchini and tomatoes. Sprinkle with Italian seasoning, salt, and pepper. Cook for 5–7 minutes until zucchini is tender.
  3. Reduce heat to low. Sprinkle mozzarella and cheddar evenly over the skillet. Cover with a lid and let the cheese melt for 2–3 minutes.
