2 lbs ground beef
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 garlic cloves, minced
2 eggs
2 tbsp chopped parsley
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 1/2 cups shredded mozzarella or cheddar (for stuffing)
1/2 cup shredded cheese (for topping)
1/4 cup ketchup or tomato sauce (optional, for glaze)
Instructions
Preheat oven to 375°F (190°C).
In a bowl, soak breadcrumbs in milk for 2–3 minutes. Add ground beef, onion, garlic, eggs, parsley, and spices. Mix gently until combined.
On parchment paper, flatten mixture into a rectangle about 1/2 inch thick.
Sprinkle center with shredded cheese. Carefully roll into a loaf, sealing edges.
Transfer to a baking pan. Brush with ketchup or tomato sauce if using.
Bake for 40–45 minutes. In the last 10 minutes, top with more cheese and broil for golden bubbly finish.
Rest for 10 minutes before slicing. Garnish with parsley.
Notes
Use a mix of mozzarella and sharp cheddar for flavor + melt.
Let the meatloaf rest to lock in juices before cutting.
Add chopped spinach or bell peppers inside for extra nutrition.
