A delicious and healthy recipe for cheesy spinach roasted red pepper stuffed chicken, perfect for a family dinner or an easy weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup roasted red peppers, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Slice a pocket into each chicken breast without cutting all the way through.
  2. In a bowl, combine the spinach, roasted red peppers, mozzarella, cream cheese, Parmesan, garlic, and Italian seasoning.
  3. Stuff each chicken breast generously with the filling and secure with toothpicks if needed.
  4. Rub the chicken with olive oil and season with paprika, salt, and black pepper.
  5. Place the stuffed chicken in a lightly greased baking dish.
  6. Bake for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Broil for 2–3 minutes until the top is beautifully golden. Garnish with fresh parsley and serve hot.

Notes

  • For a spicier kick, add red pepper flakes to the filling.
  • Make sure not to overstuff the chicken to prevent it from bursting during baking.
  • Can be served with a side salad or roasted vegetables for a complete meal.
