Delicious cheesy spinach eggplant roll ups that are perfect for a healthy dinner.

Ingredients

  • 2 large eggplants, sliced lengthwise into thin strips
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil and season lightly with salt and pepper. Arrange on a baking tray and roast for 10-12 minutes until tender and flexible.
  2. In a bowl, combine spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic, and Italian seasoning. Mix until creamy and evenly blended.
  3. Spread a thin layer of marinara sauce in a baking dish. Place a spoonful of filling onto each eggplant slice and roll tightly. Arrange seam-side down in the baking dish.
  4. Top with remaining marinara sauce and extra mozzarella cheese. Bake for 20-25 minutes until bubbling and golden brown.
  5. Garnish with fresh parsley and serve hot with salad, roasted vegetables, or garlic bread.

  • Make sure to slice the eggplants thinly for easy rolling.
