2 large eggplants, sliced lengthwise into thin strips
2 tablespoons olive oil
Salt and black pepper to taste
2 cups spinach, chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
1 teaspoon Italian seasoning
1 1/2 cups marinara sauce
1 cup shredded mozzarella cheese (for topping)
Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil and season lightly with salt and pepper. Arrange on a baking tray and roast for 10-12 minutes until tender and flexible.
In a bowl, combine spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic, and Italian seasoning. Mix until creamy and evenly blended.
Spread a thin layer of marinara sauce in a baking dish. Place a spoonful of filling onto each eggplant slice and roll tightly. Arrange seam-side down in the baking dish.
Top with remaining marinara sauce and extra mozzarella cheese. Bake for 20-25 minutes until bubbling and golden brown.
Garnish with fresh parsley and serve hot with salad, roasted vegetables, or garlic bread.
Notes
Make sure to slice the eggplants thinly for easy rolling.
Feel free to add other vegetables to the filling for extra flavor.
These roll ups can be made ahead of time and baked just before serving.
