A creamy and cheesy shrimp stuffed pasta bake perfect for a cozy dinner. This dish combines tender shrimp, ricotta, and mozzarella in jumbo shells, topped with a rich cream sauce.

Ingredients

  • 8 jumbo pasta shells or manicotti tubes
  • 1 cup cooked shrimp, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/4 cup diced red bell pepper (optional)
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • Salt & pepper, to taste
  • 1 ½ cups heavy cream
  • 1 tbsp butter
  • 1 tbsp chopped parsley (plus more for garnish)

Instructions

  1. Boil the pasta shells al dente in salted water. Rinse under cold water and set aside.
  2. Mix shrimp, ricotta, mozzarella, Parmesan, red bell pepper, garlic, lemon zest, salt, and pepper in a bowl.
  3. Fill each shell with the shrimp mixture and place seam side down in a buttered baking dish.
  4. Melt butter in a saucepan, stir in cream and a sprinkle of Parmesan. Simmer for 2–3 minutes until slightly thickened.
  5. Pour the cream sauce over the shells, sprinkle with extra mozzarella, and bake at 375°F for 20–25 mins until bubbly and golden.

Notes

  • Cook shrimp beforehand if using raw shrimp.
  • Add extra cheese for a richer dish.
  • Garnish with fresh parsley before serving.
