Cheesy Shrimp Enchiladas are a creamy, cheesy, and flavorful seafood bake perfect for weeknight dinners.

Ingredients

  • 1 lb cooked shrimp (peeled and roughly chopped)
  • 6 flour tortillas
  • 1½ cups shredded Monterey Jack cheese
  • 1 cup sour cream
  • ½ cup green enchilada sauce (or salsa verde)
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp chili powder
  • Salt & pepper to taste
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, combine shrimp, 1 cup cheese, sour cream, cumin, garlic powder, chili powder, salt, and pepper.
  2. Spoon the filling into tortillas and roll them tightly. Place seam-side down in a greased baking dish.
  3. Pour green enchilada sauce evenly over the enchiladas. Sprinkle remaining Monterey Jack cheese on top.
  4. Bake at 375°F (190°C) for 20–25 minutes until cheese is melted, golden, and bubbly.
  5. Top with fresh cilantro and serve hot.
