  • 1 large head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 3 garlic cloves, minced
  • 3/4 cup grated parmesan cheese
  • 1 cup shredded mozzarella
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley
  • Extra parmesan for topping

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast 15 minutes until slightly tender.
  3. Meanwhile, melt butter in a saucepan over medium heat. Add garlic and sauté 30 seconds.
  4. Whisk in flour and cook 1 minute. Slowly add milk and cream, whisking constantly until smooth and thickened.
  5. Stir in parmesan, half the mozzarella, Italian seasoning, salt, and pepper. Cook until cheese melts into a silky sauce.
  6. Arrange roasted cauliflower in prepared baking dish. Pour creamy garlic sauce evenly over top.
  7. Sprinkle remaining mozzarella and extra parmesan over the top.
  8. Bake 20–25 minutes until bubbly and golden. Broil 2–3 minutes for extra browning if desired.
  9. Garnish with fresh parsley before serving.
