- 6 boneless, skinless chicken thighs (or breasts)
- Salt and black pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup shredded mozzarella
- 1/3 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (plus more for garnish)
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a skillet over medium-high and sear chicken 3–4 minutes per side until golden. Transfer to baking dish.
- In the same skillet, melt butter and sauté garlic until fragrant (30 seconds).
- Stir in chicken broth and cream. Simmer 2–3 minutes until slightly thickened.
- Add mozzarella, Parmesan, and parsley. Stir until melted and smooth.
- Pour sauce over chicken and bake uncovered for 25–30 minutes until bubbly and cooked through.
- Broil 2–3 minutes at the end for a perfectly golden top.
- Garnish with extra parsley and serve hot.
Notes
- Thighs stay extra juicy, but breasts work beautifully too.
- Let the dish rest 5 minutes before serving to thicken the sauce.
