2 large eggplants, sliced lengthwise into thin strips
1 tablespoon olive oil
1 pound ground beef or ground turkey
1 small onion, finely chopped
2 garlic cloves, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper to taste
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil and place on a baking tray. Roast for 10-12 minutes until soft and flexible.
Heat a skillet over medium heat. Cook onion until soft and lightly golden. Add garlic and sauté for 1 minute. Add ground beef and cook until browned. Season with paprika, Italian seasoning, salt, and black pepper. Stir in a few tablespoons of marinara sauce and simmer for 5 minutes.
Place a spoonful of meat filling on each eggplant slice. Add a little mozzarella cheese and roll tightly. Arrange the rolls seam-side down in a baking dish.
Top with remaining marinara sauce, mozzarella cheese, and Parmesan cheese. Bake for 20-25 minutes until bubbling and golden brown.
Garnish with fresh parsley and serve hot with salad, pasta, or garlic bread.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms.
Adjust seasoning according to taste.
These rolls can be prepared in advance and stored in the refrigerator before baking.
