2 large eggplants, sliced lengthwise
2 tablespoons olive oil
Salt and black pepper to taste
1 pound ground beef
1 small onion, finely chopped
3 garlic cloves, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
1/2 teaspoon chili flakes
2 tablespoons chopped parsley
2 cups tomato sauce
1 tablespoon tomato paste
1 tablespoon olive oil
1 teaspoon oregano
1 1/2 cups mozzarella cheese
1/2 cup grated parmesan cheese
1 teaspoon dried herbs
Fresh parsley for garnish
Instructions
Preheat the oven to 400°F (200°C).
Brush eggplant slices with olive oil and season with salt and pepper. Arrange on a baking tray and roast for 15 minutes until flexible and lightly golden.
Heat olive oil in a skillet over medium heat. Cook onion until soft, then add garlic. Add ground beef, paprika, Italian seasoning, chili flakes, salt, and pepper. Cook until browned and rich in flavor. Stir in chopped parsley.
Place a spoonful of beef filling onto each roasted eggplant slice. Roll tightly and arrange seam-side down in a baking dish.
Mix tomato sauce with tomato paste, garlic, olive oil, and oregano. Pour sauce over the eggplant roll-ups. Top generously with mozzarella cheese, parmesan, and dried herbs.
Bake for 20-25 minutes until bubbling, cheesy, and golden on top.
Garnish with fresh parsley and serve hot with rice, salad, or warm bread.
Notes
For a lighter version, use lean ground turkey instead of beef.
