A comforting and creamy cheesy chicken zucchini bake that is both delicious and easy to prepare.

Ingredients

  • 3 cups cooked chicken breast, shredded or diced
  • 2 medium zucchinis, thinly sliced
  • 1 cup sour cream
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • 1/4 cup grated parmesan
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped

Instructions

  1. Prep aroma base — Sauté onion & garlic till fragrant.
  2. Mix filling — Combine chicken, aromatics, sour cream, thyme, pepper, salt, and half the cheeses.
  3. Layer — Add half mixture to the dish, add zucchini slices, then remaining mixture.
  4. Cheese top — Add remaining mozzarella, cheddar & parmesan.
  5. Bake — 375°F (190°C) for 25–30 min until golden & bubbly.
  6. Garnish — Sprinkle parsley before serving.

Notes

  • Use light cheese & sour cream to reduce calories.
  • Substitute chicken with chickpeas for vegetarian version.
  • Slice zucchini thin for perfect tenderness.
