Ingredients

  • 2 large chicken breasts (cut into chunks or fillets)
  • 2 tbsp olive oil or butter
  • 2 cups fresh spinach (lightly sautéed)
  • 1½ cups mushrooms, sliced
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup grated parmesan
  • Optional: ½ cup heavy cream or sour cream for extra creaminess
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a skillet over medium heat and sear chicken pieces until golden and cooked through.
  2. In the same skillet, add sliced mushrooms. Cook until browned and tender.
  3. Stir in sautéed spinach, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Transfer chicken, mushrooms, and spinach to a baking dish. Pour over cream (if using), then layer with mozzarella, cheddar, and parmesan.
  5. Bake at 375°F (190°C) for 20–25 minutes, or until golden and bubbly on top. Broil for 2 minutes if desired.

Notes

  • For extra crispiness, broil for an additional 2 minutes.
  • You can substitute heavy cream with sour cream for a tangier flavor.
  • Fresh parsley adds a nice touch of color and freshness.
