- 2 large chicken breasts (cut into chunks or fillets)
- 2 tbsp olive oil or butter
- 2 cups fresh spinach (lightly sautéed)
- 1½ cups mushrooms, sliced
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper to taste
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ cup grated parmesan
- Optional: ½ cup heavy cream or sour cream for extra creaminess
- Fresh parsley for garnish
- Heat oil in a skillet over medium heat and sear chicken pieces until golden and cooked through.
- In the same skillet, add sliced mushrooms. Cook until browned and tender.
- Stir in sautéed spinach, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer chicken, mushrooms, and spinach to a baking dish. Pour over cream (if using), then layer with mozzarella, cheddar, and parmesan.
- Bake at 375°F (190°C) for 20–25 minutes, or until golden and bubbly on top. Broil for 2 minutes if desired.
Notes
- For extra crispiness, broil for an additional 2 minutes.
- You can substitute heavy cream with sour cream for a tangier flavor.
- Fresh parsley adds a nice touch of color and freshness.
