Creamy, dreamy slow cooker cheesy chicken penne – the best weeknight comfort food ever!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chiles (drained)
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan
  • 12 oz penne pasta
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Add chicken, soup, diced tomatoes, broth, garlic powder, onion powder, paprika, salt, and pepper to slow cooker.
  2. Cook on LOW for 4-6 hours or HIGH for 2.5-3 hours until chicken is tender.
  3. Remove chicken, shred or slice, and return to sauce. Stir in cheddar and Parmesan until melted.
  4. Cook penne al dente according to package directions. Drain.
  5. Combine pasta and cheesy chicken sauce. Garnish with parsley and serve hot.

Notes

  • For creamier sauce, add 1/4 cup heavy cream with the cheese.
  • Substitute rotisserie chicken to save time – cook sauce for 1 hour instead.
  • Leftovers keep well refrigerated for 3 days.
