Creamy, dreamy slow cooker cheesy chicken penne – the best weeknight comfort food ever!

- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) diced tomatoes with green chiles (drained)
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan
- 12 oz penne pasta
- 2 tbsp chopped fresh parsley (for garnish)
- Add chicken, soup, diced tomatoes, broth, garlic powder, onion powder, paprika, salt, and pepper to slow cooker.
- Cook on LOW for 4-6 hours or HIGH for 2.5-3 hours until chicken is tender.
- Remove chicken, shred or slice, and return to sauce. Stir in cheddar and Parmesan until melted.
- Cook penne al dente according to package directions. Drain.
- Combine pasta and cheesy chicken sauce. Garnish with parsley and serve hot.
Notes
- For creamier sauce, add 1/4 cup heavy cream with the cheese.
- Substitute rotisserie chicken to save time – cook sauce for 1 hour instead.
- Leftovers keep well refrigerated for 3 days.
