- 2 cups cooked rotini or bowtie pasta
- 2 large chicken breasts, grilled and sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/2 cup milk
- 1 tbsp butter
- 1/2 onion, thinly sliced
- 1/2 red bell pepper, diced
- 2 garlic cloves, minced
- Salt and black pepper, to taste
- 1/2 tsp paprika
- Fresh parsley, chopped (for garnish)
- In a large skillet, melt butter and sauté onions, garlic, and red bell peppers over medium heat until fragrant.
- Season chicken breasts with paprika, salt, and pepper, then grill or pan-sear until golden and cooked through. Slice into strips.
- In the same skillet, pour in milk and heavy cream. Stir in cheddar and mozzarella until melted and creamy.
- Add the cooked pasta and chicken slices to the sauce, tossing gently to coat.
- Transfer the cheesy pasta to an oven-safe dish, sprinkle with extra cheese, and broil for 3–5 minutes until bubbly and golden brown.
