Crispy, cheesy, and loaded with bold Tex-Mex flavor, these Cheesy Beef Taco Egg Rolls are the ultimate party snack or game-day win!
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 cup shredded cheddar cheese
1/2 cup diced red bell pepper
1/2 cup chopped green onions
1/3 cup sour cream
12 egg roll wrappers
Vegetable oil, for frying
Fresh cilantro, chopped (for garnish)
1. Cook ground beef until browned. Add taco seasoning and water, simmer until thickened.
2. Mix cooked beef with red bell pepper, green onions, and cheddar cheese.
3. Place 2 tbsp filling in each egg roll wrapper. Add a dab of sour cream. Roll tightly and seal edges with water.
4. Heat oil to 350°F. Fry 2–3 egg rolls at a time until golden and crispy, about 2–3 minutes.
5. Drain on paper towels. Garnish with cilantro and serve hot with salsa, guac, or sour cream.
Use lean ground beef to reduce grease.
Don’t overfill or egg rolls may burst.
