Cheesy beef stuffed eggplant roll-ups are a delicious and comforting dish featuring roasted eggplant filled with a savory ground beef mixture and topped with melted cheese.

  • 2 large eggplants, sliced lengthwise
  • lbs lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1½ cups marinara sauce
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Brush the eggplant slices lightly with olive oil and roast for 10–12 minutes until soft and flexible.
  2. Heat olive oil in a skillet over medium heat. Cook the onion until softened, then stir in the garlic and sauté for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
  4. Stir in the tomato paste, marinara sauce, Italian seasoning, garlic powder, smoked paprika, salt, and pepper. Simmer for 8–10 minutes until thickened.
  5. Place a spoonful of the beef mixture onto one end of each eggplant slice. Add a little mozzarella, then roll up tightly.
  6. Arrange the roll-ups seam-side down in a lightly greased baking dish.
  7. Spoon the remaining marinara sauce over the roll-ups and top with the remaining mozzarella and Parmesan cheese.
  8. Bake for 20–25 minutes, until the cheese is melted, bubbly, and lightly golden.
  9. Garnish with fresh parsley and serve hot with garlic bread, pasta, or a crisp green salad.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • Feel free to adjust the seasoning according to your taste.
  • These roll-ups can be made ahead of time and reheated before serving.
