A delicious and comforting dish featuring eggplants stuffed with a savory ground beef mixture and topped with melted cheese.

Ingredients

  • 2 large eggplants, halved lengthwise
  • 2 tbsp olive oil
  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Score the eggplant flesh, brush with olive oil, and roast for 20 minutes until tender.
  3. Scoop out some of the flesh, chop it, and set aside.
  4. In a skillet, cook the ground beef with the onion until browned. Add the garlic and cook for 1 minute.
  5. Stir in the chopped eggplant, marinara sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes.
  6. Fill the roasted eggplant halves with the beef mixture.
  7. Top generously with mozzarella and Parmesan.
  8. Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
  9. Garnish with fresh parsley and serve hot with garlic bread or a crisp green salad.

Notes

  • For a lower carb option, use less marinara sauce or a sugar-free version.
  • Feel free to add other vegetables to the beef mixture, such as bell peppers or mushrooms.
  • Leftovers can be stored in the refrigerator for up to 3 days.
