- 2 large eggplants, halved lengthwise
- 2 tbsp olive oil
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 cups marinara sauce
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped
- Preheat the oven to 400°F (200°C).
- Score the eggplant flesh, brush with olive oil, and roast for 20 minutes until tender.
- Scoop out some of the flesh, chop it, and set aside.
- In a skillet, cook the ground beef with the onion until browned. Add the garlic and cook for 1 minute.
- Stir in the chopped eggplant, marinara sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes.
- Fill the roasted eggplant halves with the beef mixture.
- Top generously with mozzarella and Parmesan.
- Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
- Garnish with fresh parsley and serve hot with garlic bread or a crisp green salad.
Notes
- For a lower carb option, use less marinara sauce or a sugar-free version.
- Feel free to add other vegetables to the beef mixture, such as bell peppers or mushrooms.
- Leftovers can be stored in the refrigerator for up to 3 days.
