- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup corn (optional, for sweetness)
- 1 (10 oz) can enchilada sauce
- 1 (8 oz) can tomato sauce
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt & pepper to taste
- 1 ½ cups shredded Mexican blend cheese
- 6 large flour tortillas
- Sour cream and chopped cilantro (for topping)
- Fresh lime wedges (for serving)
- In a large skillet, cook ground beef with onion and garlic until browned and crumbly. Season with cumin, chili powder, salt, and pepper.
- Stir in tomato sauce and 3/4 of the enchilada sauce. Simmer for 5–6 minutes.
- Spoon the beef mixture into tortillas, top with shredded cheese, roll tightly, and place seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top, sprinkle with more cheese, and bake at 375°F (190°C) for 20 minutes.
- Serve hot, topped with sour cream, fresh cilantro, and lime wedges.
