A quick and easy recipe for cheesy beef enchiladas that the whole family will love.

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup corn (optional, for sweetness)
  • 1 (10 oz) can enchilada sauce
  • 1 (8 oz) can tomato sauce
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • 1 ½ cups shredded Mexican blend cheese
  • 6 large flour tortillas
  • Sour cream and chopped cilantro (for topping)
  • Fresh lime wedges (for serving)

Instructions

  1. In a large skillet, cook ground beef with onion and garlic until browned and crumbly. Season with cumin, chili powder, salt, and pepper.
  2. Stir in tomato sauce and 3/4 of the enchilada sauce. Simmer for 5–6 minutes.
  3. Spoon the beef mixture into tortillas, top with shredded cheese, roll tightly, and place seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top, sprinkle with more cheese, and bake at 375°F (190°C) for 20 minutes.
  5. Serve hot, topped with sour cream, fresh cilantro, and lime wedges.
