1 tbsp olive oil
1 medium onion, chopped
1 red bell pepper, diced
500g ground beef
2 tsp cumin
1 tsp chili powder
1 tsp paprika
½ tsp garlic powder
Salt & pepper, to taste
1½ cups cooked rice
1 cup enchilada sauce
1½ cups shredded cheddar cheese
Fresh parsley or coriander, for garnish
Instructions
Heat oil in a skillet over medium heat. Sauté onion for 3 minutes, then add pepper and cook 2 more minutes. Add beef and cook until browned. Drain excess fat and season with spices.
Stir in cooked rice and enchilada sauce until evenly mixed and heated through.
Sprinkle cheese on top. Cover for 3–5 minutes to melt or broil briefly for a golden finish.
Garnish with fresh herbs and enjoy with salad, guacamole, or tortillas.
