Ingredients

4 salmon fillets, skin removed
3 cups mashed potatoes (prepared in advance)
2 tbsp olive oil
Salt and black pepper, to taste
1 tbsp lemon juice
3 garlic cloves, minced
2 cups fresh spinach, chopped
3/4 cup cream cheese
1/4 cup plain yogurt or labneh
1/2 cup shredded mozzarella
1/2 cup shredded cheddar
1 tsp dried oregano or parsley
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Spread prepared mashed potatoes evenly in the bottom of the dish.
In a skillet, heat olive oil and sauté garlic for 1 minute. Add spinach and cook until wilted. Stir in cream cheese and yogurt, season with salt, pepper, and lemon juice. Remove from heat.
Place salmon fillets on top of the mashed potatoes. Season lightly with salt, pepper, and herbs.
Spoon the creamy spinach mixture evenly over each fillet. Sprinkle mozzarella and cheddar on top.
Bake for 18–20 minutes or until salmon is cooked through and cheese is melted and golden. Broil for 2–3 minutes for extra browning if desired.
Serve hot, directly from the dish, garnished with extra herbs.
