  • 3 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • 1 cup red enchilada sauce
  • 1 cup cooked black beans (optional)
  • 2 cups shredded Mexican blend cheese
  • 46 large flour tortillas
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion until soft, then stir in garlic.
  2. Add shredded chicken, chili powder, cumin, smoked paprika, salt, and pepper. Mix in enchilada sauce and simmer until saucy.
  3. Lay out flour tortillas and spoon the cheesy chicken mixture down the center. Add black beans if using and sprinkle with cheese.
  4. Fold in the sides and roll tightly into burritos. Place seam-side down in a lightly greased baking dish.
  5. Pour extra enchilada sauce over the top and cover generously with remaining cheese.
  6. Bake at 375°F for 20–25 minutes until the cheese is melted, bubbly, and slightly golden. Let cool a few minutes before serving.
