1 cup softened butter
1 cup brown sugar
½ cup white sugar
2 eggs
1 tbsp vanilla
2¾ cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
8 oz cream cheese
½ cup powdered sugar
1 tsp vanilla
1 cup cold heavy cream
½ cup sugar
3 tbsp butter
¼ cup warm cream
Pinch of salt
Shaved chocolate, chopped nuts (optional topping)
Instructions
Bake the cookies: Cream butter with brown and white sugar until fluffy. Mix in eggs and vanilla. Add flour, baking soda, baking powder, and salt. Scoop dough onto baking sheets. Bake at 350°F (175°C) for 10–12 minutes. Cool completely.
Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip cold heavy cream to stiff peaks and fold into the cream cheese mixture. Chill to firm.
Make the caramel: Heat sugar in a pan until amber. Stir in butter, then warm cream. Add a pinch of salt and cool until thickened.
Assemble the sandwiches: Spread or pipe cheesecake filling onto the bottom of a cookie. Drizzle caramel on top. Sandwich with another cookie. Repeat for all cookies.
Finish: Top sandwiches with extra cheesecake filling, shaved chocolate, or chopped nuts if desired.
