2 pounds ground beef (80/20 blend)
1 cup breadcrumbs
1 small onion, finely diced
2 cloves garlic, minced
2 large eggs
⅓ cup milk
2 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese (mixed in)
1 cup shredded cheddar cheese (for topping)
½ cup ketchup
1 tablespoon brown sugar
1 teaspoon mustard
Instructions
Preheat oven to 375°F (190°C). Line a loaf pan or shape a loaf on a tray.
In a bowl, mix beef, breadcrumbs, onion, garlic, eggs, milk, tomato paste, Worcestershire, paprika, salt, pepper, and cheddar. Gently mix to keep it juicy.
Shape into loaf. Mix ketchup, sugar, mustard, and spread on top. Bake for 40 minutes.
Sprinkle remaining cheddar and bake another 10–15 minutes until melty and golden.
Let rest for 10 minutes before slicing.
Notes
Use 80/20 ground beef for optimal juiciness.
