Ingredients

  • Eggplant Meatballs:
    • 1 large eggplant, chopped
    • 1 tbsp olive oil
    • 1 onion, finely chopped
    • 2 garlic cloves, minced
    • 1/2 cup breadcrumbs
    • 1/4 cup grated cheese or dairy-free option
    • 1 egg or flax egg
    • 1/2 tsp oregano
    • 1/2 tsp paprika
    • Salt, pepper, parsley
  • Cauliflower Mash:
    • 1 large cauliflower, in florets
    • 2 tbsp butter or olive oil
    • 3 garlic cloves (roasted or sautéed)
    • 1/4 cup milk of choice
    • Salt and pepper
  • Yogurt Sauce:
    • 1/2 cup plain yogurt
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • 1/2 tsp smoked paprika
    • Pinch salt

Instructions

  1. Sauté onion and garlic. Add eggplant and cook till soft. Cool. Mix with breadcrumbs, cheese, egg, and seasoning. Shape into balls.
  2. Bake at 375°F for 25 mins, flipping halfway.
  3. Steam cauliflower, blend with garlic, butter, milk, and seasoning until creamy.
  4. Whisk yogurt sauce ingredients together.
  5. Plate mash, top with balls, drizzle sauce, sprinkle parsley.

  • Chill eggplant mix before shaping.
  • Use gluten-free breadcrumbs for an allergy-safe version.
