- 2/3 cup all-purpose flour
- 2 cups finely grated carrots
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Powdered sugar (for rolling)
- 8 oz cream cheese, softened
- 4 tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- Chopped pecans (optional)
- Extra frosting drizzle (optional)
- Beat eggs, sugar, and vanilla until fluffy. Stir in dry ingredients and carrots.
- Spread batter in a lined jelly roll pan and bake at 350°F (175°C) for 10–12 minutes.
- Dust a towel with powdered sugar, flip cake onto it, and roll tightly. Cool completely.
- Beat cream cheese, butter, powdered sugar, and vanilla until creamy.
- Unroll cooled cake, spread filling, then roll again. Chill to set. Top with pecans if desired.
