A moist and spiced carrot cake topped with decadent cream cheese frosting, perfect for any occasion.

Ingredients

  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup oil
  • 4 eggs
  • 2 tsp vanilla
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple
  • 1/2 cup chopped pecans
  • 225g cream cheese
  • 1/2 cup butter
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 175°C (350°F). Mix dry ingredients. In another bowl, whisk sugars, oil, eggs, and vanilla. Combine wet and dry, then fold in carrots, pineapple, and nuts.
  2. Pour into 2 pans and bake for 30–35 minutes. Cool completely.
  3. Beat cream cheese and butter until smooth. Add sugar and vanilla. Frost cooled cakes and top with pecans.

Notes

  • Add raisins for sweetness.
  • Use coconut sugar for a more natural flavor.
  • Chill before slicing for neat layers.
