Carrot Cake Banana Bread is a moist, spiced loaf that combines the flavors of banana and carrot cake, topped with a creamy frosting for a delightful comfort bake.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup finely grated carrots
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ cup chopped walnuts or pecans (optional)
  • For the cream cheese frosting (optional):
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • Chopped pecans + grated carrot for garnish

Instructions

  1. In a bowl, whisk together mashed bananas, grated carrots, eggs, oil, sugars, and vanilla.
  2. In a separate bowl, stir flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Gently fold dry into wet until just combined. Stir in nuts if using. Pour into a greased loaf pan.
  4. Bake at 350°F (175°C) for 50–60 minutes or until a toothpick comes out clean. Cool before frosting.
  5. Beat frosting ingredients until smooth, spread over cooled loaf. Top with pecans and shredded carrot.

Notes

  • Ensure bananas are very ripe for the best flavor.
  • Optional nuts can be omitted for a nut-free version.
  • Store leftovers in an airtight container for up to 3 days.
