2 ripe bananas, mashed
1 cup finely grated carrots
2 large eggs
½ cup vegetable oil
½ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp ground cinnamon
¼ tsp nutmeg
¼ cup chopped walnuts or pecans (optional)
For the cream cheese frosting (optional):
4 oz cream cheese, softened
2 tbsp butter, softened
1 cup powdered sugar
½ tsp vanilla extract
Chopped pecans + grated carrot for garnish
Instructions
In a bowl, whisk together mashed bananas, grated carrots, eggs, oil, sugars, and vanilla.
In a separate bowl, stir flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Gently fold dry into wet until just combined. Stir in nuts if using. Pour into a greased loaf pan.
Bake at 350°F (175°C) for 50–60 minutes or until a toothpick comes out clean. Cool before frosting.
Beat frosting ingredients until smooth, spread over cooled loaf. Top with pecans and shredded carrot.
Notes
Ensure bananas are very ripe for the best flavor.
Optional nuts can be omitted for a nut-free version.
Store leftovers in an airtight container for up to 3 days.
