Smooth, creamy, caramelized and completely unforgettable! This Caramelized Vanilla Cheesecake is the perfect dessert for any occasion.

Ingredients

  • 200g digestive biscuits or graham crackers, crushed
  • 1/2 cup unsalted butter, melted
  • 500g cream cheese, softened
  • 1 cup Greek yogurt
  • 3/4 cup sugar
  • 3 large eggs
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract
  • Powdered sugar, for dusting
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper.
  2. Combine crushed biscuits with melted butter and press into the base of the pan. Bake for 10 minutes, then let cool.
  3. In a large bowl, beat cream cheese until smooth. Add yogurt, sugar, eggs, cornstarch, lemon juice, and vanilla. Mix until well blended and silky.
  4. Pour the mixture over the crust and smooth the top. Bake for 50–60 minutes or until center is just set and top is lightly golden.
  5. Turn off oven, leave the cheesecake inside with door ajar for 1 hour. Chill in the fridge at least 4 hours or overnight.
  6. Dust with powdered sugar and top with mint leaves before serving.

Notes

  • Avoid overmixing to prevent cracks
  • Bake in a water bath for extra smooth texture
  • Best made a day ahead for full flavor
