Caramelized stuffed onion bombs are a savory dish made from large sweet onions filled with a delicious mixture of ground beef, Italian sausage, rice, and cheese, then baked to perfection with a caramelized glaze.

  • 4 large sweet onions
  • 1 pound ground beef
  • 1/2 pound Italian sausage
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cooked rice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup barbecue sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon butter

Instructions

  1. Prepare the onions: Peel the onions and cut off the tops. Hollow out the centers carefully, keeping the outer layers intact to create onion shells. Boil for 8–10 minutes until slightly softened, then drain.
  2. Make the savory filling: In a skillet, cook ground beef, sausage, chopped onion, and garlic until browned. Stir in rice, mozzarella, parmesan, parsley, paprika, garlic powder, salt, and pepper until fully combined.
  3. Stuff the onions: Fill each onion shell generously with the meat mixture, packing tightly. Wrap outer onion layers around the filling to create a sealed stuffed onion bomb.
  4. Glaze & roast: Mix barbecue sauce, balsamic vinegar, brown sugar, Worcestershire, and butter. Brush generously over each stuffed onion. Roast at 375°F (190°C) for 35–45 minutes, basting occasionally, until deeply caramelized and sticky.
  5. Serve: Let rest for a few minutes, then slice open and serve hot with extra glaze spooned over the top.
